Do you know how difficult it is to not use the word boner while writing about Cockasian Food Truck getting new owners? Fans of naughty puns and Asian food truck snacks might get pumped when they learn who has taken over the tongue-in-cheek mobile eatery. First opened by Candie Yoder, the truck wasn't allowed to park at the Port of San Antonio because of its cheeky name; all the hullabaloo eventually landed the truck on Saturday Night Live's Weekend Update segment.
Chef Luciano Valadez, of Taps y Tapas, will rise to the occasion and return to his food truck roots. Valadez, a graduate of Le Cordon Bleu who spent five years with Pei Wei and PF Chang's before opening his own truck, will tweak the menu slightly, while adding his experience running TexAsada food truck. Cockasian's first run under new ownership will come this Saturday from noon to close during Josabi's Food Truck-A-Palooza.
"I wanted to push myself a little more...the restaurant is up and running, and I wanted to take on another project," Valadez said. "I thought this could be a new challenge."
Valadez will bring in completely new recipes while expanding the menu's footprint to include all manners of Asian foods including Vietnamese, Thai, etc. He and his team at Taps have spent the last several weeks researching and developing new items for the truck. Here's a quick look at the menu posted on the truck's Facebook:
•Asian steamed buns- (2)five spiced beef cheek on Asian steamed buns topped with pickled, Daikon, carrots, onion, cucumber, toasted sesame seed and fresh cilantro $10
•Korean fried chicken- Sweet n spicy Korean style fried chicken wings served with steamed rice and five spiced collard greens $10
•Edamame salad- Buckwheat noodles, edamame, cherry tomatoes, fresh cilantro, mint tossed in sesame ginger dressing $8
•Korean BBQ tacos-(2) Korean style BBQ pork tacos topped with Asian slaw ( red cabbage, napa cabbage, sprouts, scallion, and sesame seed) $ 8
