(303 Pearl Pkwy., Suite 111), the first solo concept by chef Geronimo Lopez that was announced this past March, is opening its doors to the public next Tuesday, July 5.
The former chef at Culinary Institute of America-San San Antonio's NAO will bring Peruvian-Asian fare to the city featuring “Chifa” and “Nikkei” cuisine, and other classics from Latin America.
According to a press release sent out by The Pearl's public relations firm, Giant Noise, the menu will feature tuna tartare and chifles, pork jowl steamed buns, duck confit and potato salteñas, as well as ceviches and tiraditos. Sushi fans will get a chance to check out rolls like the Costa roll, with shrimp, crispy rice noodles and sweet ají sauce, or the sweet plantain uramaki roll (pictured), with green onion, Neufchatel cheese and spicy ‘crispies.' Wok selections are led by the savory beef lomo saltado and the crispy pork belly Chaufa rice dish.
Several menu items have been sampled through a few sneak peek dinners put together by Botika and The Pearl. The tiraditos will be a welcome way to beat the summer heat, and the pork belly chaufa rice dish already has a few fans.
The restaurant, which formerly housed Arcade Midtown Kitchen now features an open kitchen and a sushi-ceviche bar with counter seating. The interior for Botika was designed by Courtney + Company Design along with the branding by Hilmy's team of creatives, the latter of which handled the building's wrap and Lopez's motorcycle. Cocktail fans can look forward to Botika’s cocktail menu, which includes a variety of sakes, rums, piscos and cachaças as curated by bar manager David Arciniega. I'm personally interested in diving into a Piscolero 101 (pisco, chicha morada, lemon, tonic).
