Chef Quealy Watson was shocked that more than 130 people showed up to slurp up his Tenko Ramen
pop-up during Labor Day. Thankfully, a friend had lined up for ramen at 5:30 and I was able to score a bowl without waiting for hours on end (sorry, everyone that was there).
"As a chef, that was frustrating to me because I wanted to be able to feed everyone," Watson said over the phone.
The former executive chef at Hot Joy shouldn't be, but that's neither here nor there. Needless to say a few tweaks have been made so that when folks line up tonight at Brick at 6 p.m. (and really line up early, just sayin') the wait times aren't as excruciating.
For starters, the chef and his rag-tag crew, which also includes wife Jennifer Dobbertin and Bakery Lorraine chef Chris Cheatwood helping , has doubled down on equipment that'll help produce said ramen faster inside a tiny faux kitchen.
Slight menu changes (the chicken katsu tea sandwich has been amended among other things) should also help speed things up, but at the end of the day, the space is still designed to only seat 30 people at a time.
At least there's plenty of beer and wine to drink while you wait, but let's hope the menu edits and equipment upgrades will help speed things along somewhat. Or you can just play some ping-pong while you wait.
