Jersey pizza by way of … San Antonio? Next time you’re sampling pies on the Eastern Seaboard, take a good look at the oven that spit out your slice of heaven. There’s a good chance it’s a Roto-Flex, a multi-level oven with rotating decks manufactured in the Alamo City. Maruca’s, a popular East Coast chain, swears by it — they’ve equipped each of their kitchens with one. But they’re not the only ones. Roto-Flex ships all over the U.S., Mexico, and Europe, but their real concentration is in states where pizza is a staple. So why do we have to go to New York to get kick-ass pizza if the ovens are made here?
“You’re from San Antonio, I’m from San Antonio — it’s a taco town,” said Roto-Flex rep Richard Dunfield. “When you go to places like New York, there’s `demand for` pizza on every corner. We’re recognized as the highest producing oven-per-floorspace.” At $35,000 a pop, a Roto-Flex Oven isn’t cheap and many pizzerias can’t justify the cost. But for high-traffic joints it’s ideal, as the oven’s four-stone decks rotate in the space alotted for one. “Your pizza oven is like an automobile,” Dunfield said. “It’s a workhorse and you’re gonna use it a lot, but if you take care of it, it’ll last a lifetime.”
