Hope you enjoyed the last few days of year-end, post-holiday gluttony, folks. For the enterprising and the optimistic, New Year’s resolutions have officially kicked in. Instead of a tricky new diet or an ambitious workout routine, the able bodies behind Naked Coconut Eats might instead suggest embracing a new lifestyle.
Naked Coconut Eats, founded in July 2013, is a Paleo diet-based food company. Operating out of local restaurant incubator Bake, Broil & Brew, the company delivers caveman-inspired nosh to nine locations (mostly CrossFit gyms) in the greater San Antonio area.
Husband-wife team Jason and Heather Schweitzman are the chefs and co-owners who run the Naked Coconut show. Prior to establishing the company, Heather and Jason owned Gemini CrossFit in Uvalde and operated a food truck, the menu of which featured several Paleo items. “It turned out that the Paleo dishes outsold pretty much everything else that we created,” said Jason. “We sold the gym and decided that we were going to open up a Paleo food company,” he explained, “because when you’re working out and doing CrossFit, what you’re feeding your body plays a major role.”
The Paleo diet encourages adherents consume a high-protein, high-fiber diet, cutting out processed foods, dairy, grains, legumes and anything else an ancient person couldn’t hunt or gather, on the premise that our bodies haven’t evolved as quickly as agricultural advances. “It brings you back to the way that your body is supposed to eat,” Jason said.
Most Naked Coconut meals include an 8-ounce portion of protein accompanied by veggies, fruit and good fats. Jason estimated that CrossFit athletes comprise 80 to 85 percent of their clientele, but they also serve “a lot of people just interested in eating better.”
Customers place meal orders online by Friday for the following week. Naked Coconut offers breakfast for $8, lunch for $11 and dinner for $13 on weekdays (only dinner on Mondays) and will be implementing a baked goods line including bread, muffins and granola in the near future.
Naked Coconut Eats shared their recipe for sweet potato hash, which looks easy—and tasty—enough for even the most modern eater to enjoy.
Sweet Potato Hash
1 sweet onion, diced
2 tablespoons coconut oil
1 pound sweet potatoes, shredded
1 pound cooked chicken or turkey sausage
2 1/2 teaspoons cumin
1 teaspoon cayenne pepper
Sea salt, to taste
Pepper, to taste
In a skillet over medium heat, sauté onion in coconut oil. Add sweet potato, cooking over medium heat until they soften and begin to turn golden brown. Add sausage, cumin and cayenne pepper, with sea salt and pepper to taste. Serves two.
