Much like a rebellious — and fabulous — teenager, the cupcake has established its own niche in the world of more staid baked goods. I’m sure we’ve all taken note of the trendy little cakes dressed to perfection in fanciful frosting and fondant. Even Kim Kardashian has ventured into the biz with her signature line of cupcake mix. No doubt, celebrity endorsements and shows like Cupcake Wars have catapulted the small delights into higher realms of culinary kitsch. The latest venture to enter San Antonio’s wealth of offerings is Trinicakes Cupcakery in Lincoln Heights.
My irrepressible sweet tooth dragged me into Trini’s for breakfast recently for two cupcakes and a cup of French-pressed coffee. The first, an Apple Cinnamon, counted for my serving of fruit — with a soft crumb that reminded me of coffee cake, and topped with freshly whipped vanilla icing and speckles of cinnamon. Its airy consistency melted in my mouth with a finish of sugar-crystal bite. My breakfast “dessert course” involved a simple vanilla cupcake with milk chocolate icing. Once again, the icing was as light on the tongue as créme fraiche, though the cake was a tad on the dry side. I even devoured the signature fondant stamp that most people would probably set to the side.
The only problems Trinicakes faces are easy fixes. For instance, the hours aren’t posted and there is no open sign for the public. While a flyer claimed they open at 7 a.m., I dropped by around 9:30 a.m. and was told they would not open until 10. Even then, only a few of the day’s listed options were available.
