Two flour tortillas filled with Oaxaca, manchego, and asadero cheeses constitutes an adventurous enough dish to be seriously considered. But the folks at Urban Taco had other ideas. Some unsung hero decided it would be cool — and even tastier — to add grilled artichoke, oven-roasted tomatoes, grilled squash, and roasted serrano peppers to the filling. Enough? Not so fast. Ours is a greedy chef, and he/she wanted more: a poblano-pesto top. The result is a colorful, crispy, and surprisingly mild delight served with a creamy avocado sauce as pleasing to the tongue as it is to the eyes.
