Iced tea seems like the easiest thing in the world to make. How do you fuck up hot water and dried leaves? Happens all the time, though. So, we thought we’d get some schooling from bona-fide tea expert Clayton Christopher, founder of Austin’s Sweet Leaf Tea, who was in town last week with Savvy Vodka creator Chad Auler to promote their seemingly inevitable joint venture, Deep Eddy Sweet Tea Vodka (see page 61).
Put 1 ounce of tea in a half gallon of boiling water (185 degrees if you want to get mathematical about it). Remove from the heat, and let it steep for four to five minutes (no longer or the tea will start releasing all those bitter tannins). Remove the tea from the hot water and add sugar to taste (3/4 cup recommended for semi-sweet tea). Stir till dissolved, and pour over a full gallon pitcher of ice. Serve in glasses over ice. Garnish with lemon and mint leaves. Yum.
