Copa's wine list is sprawling and inclusive — from sweet to bold, in the words of owners Jeff and Angie. Bliss's is small and focused, the opposite but equally appropriate approach. Copa's bubblies are bountiful (try the Raventos Cava), they're not ashamed to offer much-maligned pinot grigio (but try instead the Oregon pinot gris), seek out torrontes from Argentina, Siduri pinot noir from California, carmenere from Chile ... and dare to try pinotage from South Africa. Sitting at Bliss' diminutive bar, the pro tip is to ask Joel if there's anything open that's not normally served by the glass. A sample may ensue. Otherwise, consider a modest Wm. Fevre Chablis or a spendy Trimbach Cuvée Frederic Emile Riesling on the white side, a disciplined Willamette Valley Pinot or a seductive Domaine Raspail-Ay Gigondas from the red ledger. Finish with a pink, Italian bubbly because you deserve it. Both places feature small plates more than up to the challenge of the wines.
