Driven home by Randy Garibay’s classic album Barbacoa Blues and Hacienda’s contemporary offering Big Red & Barbacoa, the Alamo City is the epicenter of the distinctly Texan combo of barbacoa and Big Red. Why slow-cooked beef head and bubble-gummy soda marry so well clearly lies in the mouth of the beholder.
