Coming from a family of restaurateurs, Kay Ito knew she had to do the same. She had conversations with her friends about Japanese ramen and found out most of them still confused it with the “instant ramen you find for 25 cents,” as she said.

Ito Ramen was born out of the restaurateur's desire to share Japanese culture with new friends. She wants a small restaurant where she can get to know her customers by name and ask them how they’re doing. The restaurant focuses on Hakata-style ramen that is authentic but influenced by new Japanese cuisine. Ito Ramen will also serve the usual appetizers like gyoza and takoyaki as well as deserts like mochi. In the future Ito hopes to serve Japanese-style smoothies.

The space is small, seating about 30 people, because Ito wanted it to simulate the feeling of a real Japanese restaurant. Ito Ramen is self-serve, so you’ll order at the counter and pick it up when it’s ready. Seating at Ito Ramen is open to encourage patrons and guests take a seat next to a stranger and enjoy ramen together, either by striking up a conversation or by just enjoying a meal alone but sitting side-by-side. Or you can enjoy the artwork on the wall featuring one of Japan’s most famous animes of all time: One Piece.

The menu currently features two different ramen bowls; Ito Ramen and Tonkatsu, though more will be added in the future.

Soft opening dinner started Tuesday and hours are posted daily on Ito's Facebook page.
