Pasha Mediterranean Grill, which opened its first location off Wurzbach Road 10 years ago, just opened its latest location.

This time they're ditching the sit down concept for Pasha Express, a concept they've dabbled with inside Incarnate Word, which opened last year. With Pasha Express, the company is offering to-go options and disposable plates along with counter service.

This makes the fifth restaurant for the company, not including Naara Café and Baklovah.

"We're trying to move toward something easier, in hopes of opening more and testing the concept in other cities like Austin or surrounding areas," said owner Bill Dieri, "The other locations are great and people love them and it's working, but they're not very user friendly for us. We're trying to simply and speed things up in some aspect.

The Culebra Pasha Express, is open 11 a.m. to 9 p.m. Monday through Saturday and takes up approximately 2,000 square feet as opposed to the usual 4,000 of the sit down locations. The Pasha Express menu includes upgraded wraps, build-your-own bowl or salad options, with choice of base, protein, and a handful of house-made sauces including a barbecue sauce, tzatziki, garlic aoili, hummus or spicy chili oil.

The 24-foot food truck will feature a similar menu when it rolls out this coming week.
