Hot chicken is a Nashville specialty but, this month, Chi Chi Birds Hot Chicken will bring the heat to Sangria on the Burg during its Monday night pop-ups.

San Antonio native Caleb Lott, owner of Chi Chi Birds, spent more than a decade working in Colorado and California kitchens, but “when I got back, I realized that there were foods that I missed from my travels, that I couldn’t find here — especially hot chicken,” he said.

Chi Chi Birds offers a choice of mild, medium, hot and ultra hot chicken, largely made with locally sourced ingredients, as well as side items like coleslaw and french fries. Lott launched the hot chicken pop-ups with friend Lucas Gonzalez in June, but Chi Chi’s has since developed a loyal fan base.

“We’re currently in the process of raising money, but we’re hoping to open a food truck by March,” Lott said. In the meantime, hot chicken fans can follow the business’ Instagram for menu and event updates, or get their fix from the pop-up ‘s Monday night takeovers.

Chi Chi Birds Hot Chicken will pop-up at Sangria on the Burg on Monday evenings from 5 p.m. to 9 p.m. through mid-February.
