New Projects on the Way Inside Former Ciao Lavanderia

There's some big changes coming to the Olmos Park area. Three members of the Texas Cooks' Co-Op are taking over the former Ciao Lavanderia space, first launched by Damien Watel, to open three separate projects.

Luis Colon (formerly with Biga on the Banks, Luke Riverwalk and Bella on the River), Cecilia Barretto (co-owner of Vinously Speaking) and David Naylor (former head bartender at Sustenio) will open FOLC, Park Social and Alumina over the next several months inside the 3,300 square-foot space. FOLC will feature contemporary takes on American fare while Barretto (who holds a level three advanced certification of the wine spirit education trust) will oversee the beverage department. Tentative menu items include chicken liver parfait, pork rillete spread with radishes and chives, crab legs and chili butter and hay-marinated carrots, labneh and caraway. They hope to open 11 a.m.-2:30 p.m. and 5:30-10p.m. Tuesday-Saturday and 10:30 a.m.-2 p.m. Sundays. Saturday and Sunday brunch will be available.

Phase two will be Park Social, a cocktail bar where Naylor will design a menu of traditional and contemporary 'tails. Naylor is currently staging, or interning, for Chicago's The Aviary, inside Grant Achatz's restaurant Next. The bar's head bartender Charles Joly, just so happened to win the Diageo World Class 2014 competition in London and was named best bartender in the world. So, there's that.

FOLC and Park Social should launch by early fall, while Alumina, a ticketed dining experience will open in early 2015.
