It’s a deceptively simple combo: spinach, bacon, grilled chicken, and provolone between two slices of focaccia bread. But something special happens when Guillermo’s (or, as they say when they answer their phone: “Guiiiiiiiiiiiiiiiiillermo’s!”) adds it all up. Maybe it’s the way the focaccia bread is toasted to golden perfection, or how the warm, melted provolone makes the crisp bacon and tender chicken stick together like they were soulmates. The sandwich is hearty on its own, but don’t skip the side of excellent bowtie pasta salad and make it a Tony’s Special.
