There's a Ramen Pop-Up on the Way Via Former Hot Joy Chef

Hold on to your fishcakes, people. A very familiar face is bringing a ramen pop-up to Brick at Blue Star on Monday, September 5.

Quealy Watson, who recently finished a stint with The Old Main Assoc. after parting ways with The Empty Stomach Restaurant Group, will test out recipes for Tenko Ramen a project he's still pretty tight-lipped on.

For the September 5 pop-up, Watson and wife Jennifer Dobbertin will serve up a spicy tonkotsu with miso chili butter, soft pickled egg, chashu pork belly, sprouts, cilantro and scallions ("our tonkotsu broth is simmered for a large enough number of hours for the process to seem long, dedicated and almost irrational. All this resulting in a rich porky broth, with a well of flavor deep enough to disappear some one"); a classic rich rooster double soup with soft pickled egg, marinated bamboo, grilled pork, burnt nori oil, green onion; a double mushroom ramen with ("shiitake and King trumpet mushrooms go deep in this umami broth, topped off with garlicky stuffs and tofu puffs"); and a slew of add-ons including fried katsu chicken thighs. 

A few more menu items will be available by way of pickles, kimchi, a chicken katsu tea sandwich, hot edamame, garlicky slices of cucumber and sticky beef tendon nimono (or simmered dish). Prices will vary from $12 to $14 for ramen and $4 to $9 for the smaller dishes.
