    Golden Wok is in a league of its own since it is the only restaurant in San Antonio serving dim sum. In China, these small samplings are typically served only in the mornings, or as late night snacks, but Golden Wok offers the dishes everyday, all day, though a larger variety - up to 55! - is available on weekends. That is when they roll out the carts stacked high with steaming bamboo baskets full of traditional treats like Har Gau (shrimp dumplings), Fung Jou (steamed chicken feet in black bean sauce), and Nor Mai Gai (lotus leaves stuffed with sweet rice and Chinese sausage). But don't let the beef tripe and pork-filled pastries scare you; Golden Wok offers less adventurous dim sum for the tamer American palate, including taro root cake and Hong Kong-style spring rolls. Additionally, there is a menu full of regular fare, including an excellent Peking duck and a build-it-yourself stir fry bar complete with Chinese vegetables. The service is courteous, quick, and knowledgeable. Watch as the cooks prepare your stir-fry in an open kitchen area.     Mencius' features possibly the most charming staff we've ever encountered. The waiters were on top of everything, yet hardly noticeable. The attentive manager even brought over a pair of "Austinite" chopsticks - rigged with rubberbands and a napkin for easier handling - for a dining companion who was having trouble using hers. The ambience is not what you would expect from its location in a strip mall. Beautiful, framed paper cuts adorn the walls, depicting colorful scenes of festivals, fables, and traditions from the owners' hometown of Taipei, Taiwan.     Shang-Hai is a third-generation Kimura family secret surreptitiously shared with any and everyone we know. Of course, it's a lot easier to eat there when you don't live 30 minutes away, but the dependable food is definitely worth the drive up I-35. I won't pretend to understand the pretensions of authentic Chinese cuisine, but I am comfortable enough with casual American-Chinese cooking to say that Shang-Hai is absolutely solid — from their crisp, pork-carrot-cabbage-crammed egg rolls to their thick patties of egg foo young. And it is a quiet place — save for the Sunday swarm of church goers and inevitable weekday lunch bunches — tucked comfortably into a small shopping center, an appropriate locale for a family restaurant. The husband-and-wife team of Ken and Ba Lam head the dining room, and know at least half of their customers by name or by order; while co-owner Tai Ngo is steadfast in the kitchen, preparing the dishes with recipes he brought to the business from his native Vietnam. - Wendi Kimura

    Psst! Here's an insider tip: If, on an ordinary weeknight, you sit at the right table at Sompong's, your culinary/cultural experience will be much enhanced. What is the right table, you ask? The one where the waitresses, when not otherwise occupied, are folding napkins. I'm not talking about picking up a little kitchen Thai on the sly - although the language does have a certain exotic appeal - rather, it's what they're snacking on while working that is interesting: Dried, almost caramelized-looking fish about the size of a quarter were one example; we didn't ask to taste them. But we did sample some pieces of crunchy green papaya dipped in a mixture of sugar, salt, and ground, dried chiles. Great stuff. And you'll never find it on a menu. - Ron Bechtol
