This Bytes: Chili Lime Peanuts Recipe

These past few weeks in S.A have been so exciting! Our Spurs are back in the NBA Finals with their first chance at a championship since 2007. Pretty much everyone in town has Spurs fever. Everyone is driving around S.A with their Spurs flags hanging from their cars, including our parents. "Go Spurs Go" banners are hanging all over the city. It's a great time to be in S.A. Heck, it's a great time to watch basketball. The past few weeks we've watched so much basketball and we've eaten so much food. We don't know how y'all watch basketball but we usually do it with beers, pizza and snacks. Needless to say we're going to need a MAJOR health kick once the Finals are over.

We've recently discovered a quick and slightly healthier snack to munch on while watching our Spurs. They are called Chili Lime Peanuts. They are so quick to throw together and they taste great. They are spicy, salty and a little tangy, the perfect snack with any beer. You just have to have a little patience letting the peanuts dry in the oven but once they do they are totally worth it. This recipe is adapted from Eating Well, and inspired by the spicy nuts the street vendors sell in Mexico. Chili and Lime make just about anything taste better. Even peanuts!

Chili-Lime Peanuts

6 tablespoons lime juice

6 tablespoons chili powder

1/2 teaspoon cayenne pepper

6 cups salted cocktail peanuts

1. Preheat oven to 250 degrees.

2. Whisk lime juice, chili powder, and cayenne pepper together in a large bowl. Add the peanuts and toss to coat. Divide the peanuts between 2 large rimmed baking sheets, spread in an even layer.

3. Bake, stirring every 15 minutes until dry, about 45 minutes. Let the peanuts cool completely. You can also store them in airtight container for up to 3 weeks.
