Look for a brand new food truck to hit the streets early next year. But unlike other mobile kitchens, this particular truck will be sponsored by Graham Weston's (Rackspace co-founder and chairman) 80/20 Foundation and will provide fresh produce from local farmers to downtown SA and surrounding areas.
“Truckin' Tomato hits right in the heart of the foundation's goals for San Antonio,” said 80/20 Foundation Executive Director, Lorenzo Gomez. “The project is adding a great urban option to downtown residents while displaying an example of social entrepreneurship.”
The 28-foot Truckin' Tomato, slated for a January 2014, will visit large business campuses, parks, apartment complexes and special events in the area. The truck will serve as on-the-job training for Haven for Hope residents and proceeds will operate and benefit Christian Hope Resource Center. The truck is similar to Chicago's anti-food desert Fresh Moves mobile market program founded in 2007.
