The Best Brisket I've Ever Had Is Coming to San Antonio

I don't claim to know a whole lot about brisket, but I know what I like and what I don't like. And I freakin' love the brisket from 2M Smokehouse and Catering

The restaurant is on its way via longtime best pal Joe Melig and pitmaster Esaul Ramos, formerly with Austin's La Barbecue. Friends since their late teens, Melig and Ramos always talked about opening up their own barbecue spot during family get-togethers. But back to that brisket: the bark was thick, but remained juicy, the scant fat left on the brisket melted in my mouth with little to no resistance and the smoke was pleasant without being overbearing. Paired with the house-made sausage with Serrano peppers and Oaxaca cheese that oozed when sliced, the brisket was still an unforgettable bite.

The two native San Antonians are hoping to open 2M Smokehouse and Catering at the end of September, and they will host one last barbecue pop-up outside of the location this Saturday morning starting at 11 a.m.

They hope to accommodate 60 people inside the 1,500 square-foot space, and will likely keep that 30-foot-long smoker busy once the city catches on.

For the pop-up, 2M usually carries brisket, pulled pork, and equally great sides including pickled nopales with whole garlic cloves, pickled Serrano peppers, potato salad, coleslaw and variations of homemade tres leches cake. The pop-up runs 11 a.m. to sell-out, and BYOB.
