Sylvia Casares, The Enchilada Queen Cookbook Author Appearance

Sylvia Casares is the “Sylvia” in Sylvia’s Enchilada Kitchen. When Texas magazine anointed Casares “The Queen of Tex-Mex Cuisine,” she was positioned as the cuisine's official spokesperson. Her restaraunt was recently selected by USA Today as one of the “Top 10 Great Mexican Restaurants” in the USA, and was selected by Texas Monthly as one of the Top 50 Tex-Mex restaurants in Texas. In The Enchilada Queen Cookbook, Sylvia shares 80 recipes for enchiladas, fajitas and classic side dishes based on the ones that madres and abuelas have passed down from one generation to the next in the border towns along the Rio Grande. Readers will learn how to make her Holy Trinity spice paste, and simple, as well as flavor-changing tricks like using key shortcuts, such as chicken bouillon, in some dishes. Sylvia also includes her tortilla-changing Texas Two-Step marinating technique, to flavor and soften corn tortillas. With recipes for 14 key sauces, home cooks can make unbelievably delicious Tex-Mex dishes for either a family or a crowd.
