San Antonio’s Monarch Hotel will flight this spring, bringing four new food and beverage concepts to downtown. The property, scheduled for a March opening, is part of the Curio Collection by Hilton.

The restaurants and bars at The Monarch, 222 S. Alamo St., will be led by executive chef Jae H. Lee — a newcomer to San Antonio but no rookie when it comes to culinary expertise, according to details shared this week by Hilton. Lee’s pedigree ranges includes the Michelin-starred restaurant Daniel in New York City, the dining room at the Metropolitan Museum of Art, Little Park, the Austin Proper Hotel and more. 

Lobby-level Oak & Amber will serve as the hotel’s signature restaurant and feature outsize Texas influences, including a mesquite-and-oak hearth, along with an elevated dinner experience. Menu highlights include a prime rib trolley featuring a 28-day dry-aged Texas beef ribeye, carved tableside and finished with Cabernet jus and horseradish, along with lobster Thermidor with béchamel, mustard and Gruyère. The upscale dining spot also will feature a raw bar with East Coast oysters. 

Aleteo, the Monarch’s rooftop restaurant and bar, will spin in an entirely different global direction, offering a menu based in Yucatán-inspired cuisine. Guests can enjoy more than half-a-dozen house-made salsas, beef-rib mole, octopus maya with bone marrow, aguachiles and ceviches, suckling pig lechon asado and more. 

The last two concepts, the Nectarie Cafe and the lobby bar, will keep things more stripped down. Nectarie, a French-inspired bistro, will focus on a global array of pastries and bites such as Chicken Paillard à la Française with lemon caper sauce, while the lobby bar’s delights will including a caviar happy hour.
