
Laika Cheesecakes & Espresso — a San Antonio-based chain known for its scratch-made sweets and artisanal coffee — is expanding again. It’s filed plans with state regulators to open a fifth store, this one north of Loop 1604.
The new Laika outlet will be located at 2230 TPC Parkway, Suite 1103, in a new multi-use building behind an Inn-N-Out burger location, according to a recent filing with the Texas Department of Licensing and Registration.
Construction on the $200,000 project is slated to begin in May and conclude in November, documents show. However, officials with the business were unavailable for immediate comment on a grand opening date and other details.
Founded by Ukrainian immigrants Anna Afanasieva and Viktor Krisma, the first Laika Cheesecakes opened on Broadway in 2020, and the business expanded rapidly since, launching outposts on Loop 1604 and in Helotes and New Braunfels.
The stores are known for selling cheesecake in a jar, which comes in a variety of flavors. They also offer assortments of handcrafted drinks such as frappes, teas and lemonades — all delivered with the owners’ strong sense of Ukrainian pride.
The name Laika was inspired by the eponymous Soviet dog sent to space. The canine was the first animal to orbit Earth.
