Max & Louie’s New York Diner, a Bitters Road staple since 2016, will open a second location, bringing the popular breakfast, lunch and dinner spot’s signature Big Apple flavors to the northeastern bedroom community of Cibolo.

Cibolo City officials unveiled the plans a “What’s Coming Wednesday” Facebook post, saying the new Max & Louie’s will go into Cibolo Crossing, a 116-acre mixed-used development along I-13. They said they would share the restaurant’s opening date at a later time.

The expansion follows the Fall 2024 debut of Melvin’s, an ice cream shop extension of the original Max & Louie’s, 226 W. Bitters Road, #126. While patrons can stop by Max & Louie’s for the restaurant’s signature burgers, hot or cold New York-style deli sandwiches, pizzas, calzones, steaks and more, Melvin’s serves up homemade ice creams. espresso beverages, and fresh baked treats from renowned baker Jenn Riesman, formerly of Rooster Crow Bakery.

Drew Glick founded Max & Louie’s as a tribute to his great uncle Max Braverman and grandfather Louie, both of whom built successful meat businesses after immigrating to the U.S. The restaurant stands as a tribute to their entrepreneurial spirit and legacy, honoring their contributions to the American dream.

The original Max & Louie’s is open for breakfast, lunch and dinner, seven days a week.
