
New Braunfels’ nearly century-old Faust Hotel is staking its comeback on a multi-concept food and beverage program that aims to appeal to both locals and destination diners, its ownership group revealed Tuesday.
The historic hotel at 240 S. Seguin Ave. is expected to open later this spring as it completes a multimillion-dollar makeover. The Lark Hospitality-flagged property hasn’t yet released a date for its debut, however.
At the center of the Faust’s rejuvenation is Wilhelm & Werner, a Texas brasserie with European leanings, according to details released Tuesday. Dishes will include saffron tagliatelle with Gulf shrimp, Gulf striped bass with smoked oyster ragout and a roast chicken brined in Texas ale.
The program is led by Food and Beverage Director Michael Moore, whose resume includes the Alamo City’s Luce Ristorante e Enoteca and the Grand Hyatt San Antonio. Executive chef Adam Gilly brings 30 years of experience to the kitchen plus a philosophy rooted in Texas-sourced ingredients and French technique.
“The Faust Hotel is an iconic part of New Braunfels’ history,” Moore said in statement. “We can’t wait for our spaces to become a hub for the city once more.”
Beyond the main dining room, the Faust is leaning into variety. The Prince Solms Lobby Bar and refreshed Magnolia Patio will offer more casual fare. Think Hill Country-inspired cheese boards, whipped ricotta and flatbreads, for example.
Walter’s — a 20-seat basement speakeasy named for founder Walter Faust — will pair late-night bites such as popcorn-buttered lobster and confit duck tacos with a cocktail menu that leans heavily on the building’s lore. The names of drinks will include Prohibition-era nods along with tongue-in-cheek references to ghost stories tied to the property.
The Faust’s relaunch comes amid an expansion of New Braunfels’ dining options, especially in its city center. The recent additions include Old City Hall Restaurant & Bar, which launched earlier this month.
