Another Michelin-starred chef from acclaimed San Antonio restaurant Mixtli is expanding his creative skill set.
Mixtli executive chef and co-owner Diego Galicia on Thursday revealed he’s opening his first solo project this fall, a fine-dining restaurant in the Government Hill neighborhood. Dubbed Filleman House, the spot will open at 517 E. Grayson St., the former home of Restaurant Claudine.
The restaurant’s name is a nod to the property’s original owner, August Filleman, a Swedish immigrant who found a home in San Antonio.
The concept is intended to represent the embodiment of Galicia’s travels over the years — a love letter to great restaurants in major cities across the world. While the chef’s team hasn’t publicly released Filleman House’s menu or given an exact opening date, they did tease food highlights including dry-aged burgers, prime rib, classic steak cuts and oysters.
“After years of telling the stories of Mexico through Mixtli, I wanted to build something that reflects another part of who I am, not just as a chef, but as a diner,” Galicia said in a statement. “It’s the kind of place I want to eat in every day.”
He added that Filleman House is “the restaurant I’ve always craved to create.”
Another award-winning member of the Mixtli team is joining the Filleman House project. Cocktail mastermind Lauren Beckman will lead the new restaurant’s bar program, lending the expertise that earned her one of two inaugural Michelin Guide Texas Service Awards in 2024. The other went to Hailey Pruitt, Mixtli’s sommelier.
The Michelin-starred Galicia is one of San Antonio’s most lauded culinary professionals. In addition to helping Mixtli earn the only AAA Five Diamond rating in Texas, he has received Best New Chef recognition from Food & Wine and numerous James Beard Award nominations.
