The second location of San Antonio’s Thai Bird concept has landed in the bustling Castle Hills Market shopping center, according to officials with the development.

The new Thai Bird will be located at 2211 NW Military Highway, Suite 121, a location the Asian-inspired concept’s owners teased to the Current earlier this spring. Although the restaurant will begin serving soon, the owners haven’t revealed a grand opening date.

Chef David Gilbert launched Thai Bird with his business partner and fiancée, Kristin Alvarez. The restaurant’s signature Asian-inspired fried chicken dishes, based on his extensive culinary travels, are all gluten-free. The eatery also offers a curated wine list.

Thai Bird’s original outpost opened in 2023 at Make Ready Market, then jumped to its first brick-and-mortar space at 6401 Broadway, Suite 1, in Alamo Heights two years later to keep up with customer demand.

“We wanted to create something that brings those flavors together with the comfort of a neighborhood restaurant,” Gilbert said in a statement. “Castle Hills gives us the opportunity to introduce Thai Bird to a new community while staying true to what made people connect with us in the first place: really great food, hospitality and a genuine sense of community.”

Other notable dining concepts in Castle Hills Market include Viva Kitchen, European Dumplings Cafe, Sushishima, Sapore’s Pizza and the Cake and Batter Dessert Bar.
