West Side Tex-Mex institution Gilbert’s Mexican Food has shut down after serving San Antonio for decades.

In a Friday Facebook post, the business located at 8138 Marbach Road, Suite 102, revealed it would close its doors after a final weekend of service. Its last day was Sunday. 

“After more than 40 incredible years, it is with a heavy heart that I share this news: Gilbert’s Mexican Restaurant will be closing its doors after this weekend,” the post said.

In response, customers and community members launched a GoFundMe to save Gilbert’s. However, at press time, the fundraiser had only pulled in $1,060 of the $20,000 needed to keep the business open.

“This restaurant has always been more than just a business,” the message from owner Ashley Rodriguez Herrera said. “It has been a home. It is where families have gathered, celebrations have been held, and generations have shared meals together.”

She continued: “My family started Gilbert’s over four decades ago, and as a second-generation owner, it has been the greatest honor of my life to continue that legacy and be a part of this amazing community.”

On her personal page, Herrera shared a separate message: “This was not an easy choice and I have tried my utmost to keep the business thriving.”

She didn’t go into the reason behind the business’ failure, however.
