Dusty Diamond, a new pop-up saloon concept, is taking over the High Praise rooftop bar at the InterContinental San Antonio Riverwalk Hotel, 111 E. Pecan St. just in time for the San Antonio Stock Show & Rodeo.
The pop-up — an official rodeo partner — will debut Thursday, Jan. 16 and run through Sunday, March 2, according to organizers. It will even open at 9 a.m. Saturday, Feb. 1, to help guests start the day strong before heading over to the Western Heritage Parade & Cattle Drive on Houston Street.
The Dusty Diamond will feature 10 specialty cocktails inspired by hit country songs, including a “Boots Stop Working” tipple and a prickly pear-forward ranch water appropriately called “This One’s For the Girls.”
The saloon also will serve themed bar bites such as shrimp-esquites tostadas and chicken lollipops. Western-inspired vendors also will be on-site during the pop-up’s two-week run.
Additionally, the Intercontinental’s lobby will host samplings of Surtierra tequila and Stockman Wine — both official rodeo brands — every other Saturday from 7-9 p.m. starting Jan. 18. Proceeds from every bottle of Surtierra purchased onsite will go to scholarships for Texas students.
