After scaling back its footprint a decade ago, San Antonio-based diner concept EZ’s Brick Oven and Grill is back on the expansion path.

The chain will construct a new restaurant at 12922 Potranco Road, Building 1A #100, documents filed with state regulators show. Work on the $290,000 project in the fast-growing far West Side neighborhood is expected to wrap up in October, according to its filing with the Texas Department of Licensing and Regulation.

Founded by local restaurateur Cappy Lawton in the late 1980s and now operated by a separate ownership group, the chain specializes in classic American fare, including wood-fired pizzas, burgers, rosemary chicken and salads served in a colorful Mid-Century setting replete with neon and geometric space-age flourishes.

The 4,000-square-foot Potranco Road eatery would be EZ’s third location, down from a one-time high of five. The others are located at 6498 N. New Braunfels Ave. and 734 W. Bitters Road.

During the height of its popularity, the chain grew to four Alamo City locations and one in Austin. However, the owners shuttered its Alamo Quarry Market and on DeZavala Road stores in 2015. The state capital restaurant closed the following year after a $400,000 fire.

Officials with the EZ’s chain were unavailable Thursday for immediate comment on the expansion plans.
