
Those new additions include Freight Fried Chicken, Tre Pizzeria, Southerleigh Fine Food and Brewery and Pharm Table Apothecary Kitchen, the Express-News reports.
The squadron of new restaurants is led by decorated local chefs. such as Freight Fried Chicken’s Lattoia Masse — also known as Nicola Blaque — was a James Beard award semifinalist, and Southerleigh’s Chef Jeff Balfour who has cooked at the James Beard House in New York, the daily reports.
San Antonio chef and restaurateur Johnny Hernandez, who already operates several restaurants at San Antonio International, helped assemble the new team of chefs.
“Those are all friends that are in the food community who I respect and who I trust,” Hernandez told the Express-News. “I’m going to help mentor them into the process to help them understand how to operate in the airport.” Hernandez also plans to open Chef Johnny’s Mercado at the airport once a new ground loading facility opens next fall, the paper reports. Additionally, the airport expects a new Horseshoe Tequila Bar and Panda Express.
All of the new concessions are pending city council approval, according to the Express-News. Airport officials estimate the facility will make $25 million over the course of these new 10-year contracts plus another $30 million from upcoming retail contracts.
What’s more, the airport plans for additional new concessions contracts and intends to reopen the bidding process within the next eight months, according to the daily.
