This is the worst timing to coincide with National Egg Day this past June 3. With egg prices skyrocketing due to avian flu, the only people that seem unaffected by the outbreak are the vegans. Here are some ideas for traditional breakfast items with the eggs subtracted from the mix. These meals will be good on your wallet and your overall health while keeping your mornings dull-free.

1. Chickpea Omelette

What’s an omelette without eggs? This chickpea-pancake-like substitute is a nice alternative to those who don’t agree with tofu and its politics. Get the recipe at sketch-freeveganeating.blogspot.com

2. Whole-Wheat Chia Waffles

This recipe is fairly flexible from your choice of plant-based milk (almond and soy are most popular) to the multiple alternatives to eggs you can use, including “chia eggs,” pureed bananas or flax seeds. Get the recipe at veganfamilyrecipes.com

3. Vegan Quiche

Quiche is breakfast served like pie, two of my favorite things in one. This is a tofu-based dish with either almond or soy milk substitute. Get the recipe at wholefoodsmarket.com

4. Very Vanilla Vegan Pancakes

Instead of eggs, unsweetened applesauce is used to bind this very vanilla batter. Get the recipe at mylittlecelebration.com

5. Vegan French Toast

It’s hard to imagine French toast without that signature eggy texture, but it can be done. This recipe calls for coconut oil and flax seeds to make a “flax egg” along with vanilla and cinnamon toppings. Get the recipe at karalydon.com

6. “Fuel-to-Go” Muffins

The original recipe calls for ” three eggs” but that can be replaced with flax eggs used in the French toast recipe. These muffins include everything but the kitchen sink and are the perfect energy boost to last you all morning. Get the recipe at artandthekitchen.com
