San Antonio-based Merit Coffee Roasters — the team behind Local Coffee — is slated to open two new Dallas locations in Highland Park and Deep Ellum next month, according to the Dallas Observer.
Since co-founders Robby and Neesha Grubbs opened Local Coffee in 2008, the company has expanded to include six store locations in San Antonio and one in Austin, with plans to open several additional locations.
The founders, who will run Merit with chief financial officer Bill Ellis, are currently looking for a Dallas food business partner, similar to San Antonio’s Bakery Lorraine, to provide small bites and pastries. Merit’s Deep Ellum location will serve as the company’s first training space for baristas to practice or learn new techniques and host coffee tastings for the public.
No coffee menu has been released for the Dallas shops just yet, but it’s not expected to venture far from the specialty house brews, cold coffee drinks and lattes available at other locations.
