After announcing that last weekend would be its last in operation, the West Side’s Gilbert’s Mexican Restaurant now has its loyal fans to thank for a reversal of fortune.

In a Monday evening Facebook post, the Tex-Mex institution said it will be able to remain in operation after meeting a fundraising goal. In an online video message, second-generation owner Ashley Rodriguez Herrera said the community “showed up and showed out” to keep the more than 40-year-old business afloat.

“I’ve had so many people call and offer to help, to offer to work for free,” Rodriguez Herrera said in the clip.


As of Tuesday, Gilbert’s was open and once again serving customers.

Though a GoFundMe account for Gilbert’s, which is still active, shows that it raised only $1,115 of its $20,000 goal, Rodriguez Herrera said in her video message that the eatery had generated enough donations to stay open.

In the clip, a tearful Herrera Rodriguez thanked supporters, whom she said shared love from as far away as Dallas and Corpus Christi.

However, Gilbert’s isn’t out of the woods yet.

“We reached our goal, but I cannot stop there,” Rodriguez Herrera said. She asked the public to stop by for a meal or tacos to go as a way to ensure the business can stay open.

“Please, please, please don’t forget about us,” she added.
