
San Antonio’s new restaurant development is continuing its northward march with new Mexican dining spot replacing the former Rusty Taco on Bulverde Road, and an upstart bistro taking shape on TPC Parkway.
The first concept, Tulum Mexican Cuisine, is slated to open sometime this fall at 17026 Bulverde Road, according to a sign posted above the entrance of the shuttered Rusty Taco. The restaurant joins the Tradehouse at Bulverde Marketplace complex near the H-E-B on Loop 1604 and Bulverde.
The new concept will feature “modern Mexican cuisine with vibrant traditional flavors, cocktails, margs and coastal boho vibes,” according to details the owners posted on Instagram.
Meanwhile, a new eatery and bar called Ginger’s Bistro is currently in development near the JW Marriott.
A sign on the door at 4250 TPC Parkway, Suite 106, touted the forthcoming concept but offered no opening date. However, $225,000 in finish-out work on the 3,600-square-foot dining spot is already underway and expected to finish by Oct. 1, according to a filing with the Texas Department of Licensing and Regulation.
Once open, Ginger’s will join TPC Parkway’s growing network of restaurants and bars. Other establishments on the same thoroughfare include Ravello’s Italian Cuisine, Casa Morgana Gelatos, Angkor Bistro and a Fatburger location under development. Nearby JW Marriott San Antonio Hill Country Resort & Spa also has seven onside restaurants.
The Current reached out to the management of both Tulum and Ginger’s for additional details but got no response by press time Monday afternoon.
