Castle Hills' Clementine Hosting Cava Brunch

What's brunch without a little bubbly? And what better way to celebrate spring? That's what chefs John and Elise Russ had in mind when they planned this Mistinguette Cava-inspired meal to take place next month.

The first course, according to the press release, will consist of
favas, English peas, and crispy pig skins; razor clams, chorizo, and sourdough; grilled baby artichokes; and buttermilk fried chicken livers.

Brunch will move onto short-grain rice with chickpeas and Calabrian chilis; zucchini kibbeh, labneh, and sumac; slow-cooked duck legs; and confit fingerling potatoes.

The dessert course will include a biscuit, vanilla bean Bavarian cream, and Poteet strawberries; frangipane, blueberries, and honey cream; ginger doughnut holes with lemon curd; and chocolate cremeux, clementine panna cotta, and chocolate streusel.

The courses, served family-style, are paired with four styles of Cava. Tickets to this all-inclusive brunch are available on Eventbrite for $65 per person. Mark your calendar for Saturday, May 19 from noon to 2 p.m.
