Chef Cooperative, formed to help local farmers through quarterly pop-ups, is heading to Victoria again. Much like when Hurricane Harvey ravaged the area and the group traveled south to help fellow member chef James Canter, the group of chefs will head to Victoria this Sunday for V is for Victoria, a family-style multi-course meal.
The lunch will be held in Victoria from 1 to 4 p.m. with a slew of chefs that includes Stephen Paprocki (Texas Black Gold Garlic); Chris Cook (Cook Consulting); James Canter (Guerrilla Gourmet); Jeff White (Boiler House); Toby Soto (Humo); Iverson Brownell (Fork & Garden); Tatu Herrera (Tatu's Food Debauchery); Adrian Davila (Adrian Davila BBQ); Christina Everett (Creations Catering); Jenn Riesman (Silo Restaurant Group); Michael Grimes (Southern Grit Flavor); Jenn White (Brindles); and Michael Miller (Madge's Food Company).
The menu will be broken down into main dishes, side dishes and desserts. Expect coffee-blackened chicken with gingered pear and persimmon compote with grilled poblanos; roast pork with caramelized figs; burlap steamed gulf oysters with Texas chimichurri mignonette; watermelon salad with feta, mint and cracked black pepper; green hatch chile potato au gratin, smoked mushrooms with local milled cheese grits; and an apple pear pie with burnt honey caramel and goat cheese ice cream to end the night. Pair it with beer from Alamo Beer with a michelada option from Madge’s Spicy Bloody Mary Mix, and wine from Kuhlman Cellars and Lost Draw Cellars.
Proceeds benefit the Downtown Farmers Market, a program of the Food Bank of the Golden Crescent, per the Victoria Advocate.
